Yummy 4# First pumpkin soup of the year! 

Fall is coming and pumpkins are in the stores. 
My own planted pumpkins had been assassinated by fast and numerous slugs. What a pity! But next year i will try again! 





Do you wanna try my favorite pumpkin soup recipt?  Here it is: 

1 big Hokkaido pumpkin or two smaller ones 
1 big onion 
5 cm fresh ginger 
800 - 1000 ml vegetable stock 
200 g Mascapone or Ricotta or Creme fraiche 
Salt and pepper 
Oil 
150 g smoked ham as topping 

Wash pumpkin, remove seeds and cut into pieces. Dice onion. Peel and cut ginger. Heat oil in a pot. Add onions and sauté until soft. Add pumpkin and ginger. Roast two more minutes. Pour vegetable stock over pumpkin until it´s covert. Add more if you like your soup more liquid. Cook until pumpkin is tender. Add mascapone, salt and pepper and purée until smooth. Roast smoked ham until it´s crispy. Serve the soup in bowls and top it with a spoonful of smoked ham.
